When opening the Rustom Daughters café, the team contacts Jeff to recreate a version of the original sign. The process involves using blue gas and mercury combined with phosphorescent powders to achieve vibrant colors. Neon signs were prominent in the 1920s and 1930s, but have largely been replaced by Jumbotrons in Times Square. Despite the rise of LEDs, neon retains its unique charm. The art of slicing fish at Russ & Daughters is also highlighted, showcasing the skill and subtlety required to achieve the perfect cut.
